Our Roasting Philosophy

OUR ROASTING PHILOSOPHY

We believe that coffee is as diverse as the people and cultures we have met in our life’s journey. We work meticulously towards building a coffee lineup from all over the world which we want to ensure has a variety of coffee for our clients from which to choose.

Our coffee is hand roasted with precision and care, in small batches, focusing on preserving its natural attributes and highlighting each variety’s unique flavour. 

In roasting, the coffee beans’ unique attributes give us the best it has.

Our process is roasting and then cupping - evaluating the coffee’s acidity, body, flavour, aroma, aftertaste, and natural sweetness. We then adjust our roast profile and repeat until we are excited by the outcome. In this process, a unique roasting curve is developed to suit each individual coffee. The roasting curve allows us to repeatedly roast the coffee in the same way to maintain flavour, quality, and consistency.

Roast degree

Medium 
Medium roast is for the coffees that present themselves with nutty, chocolate, cane sugar, and certain fruity flavours. We roast these coffees to create a balanced cup with beautiful aromas, balanced acidity, and naturally caramelized sweetness. For espresso, we might go slightly over to medium dark (city roast).

Light
When a coffee presents itself with exotic fruity or floral flavours and pronounced acidity, we will do a light roast (Nordic style) to preserve the delicate flavour attributes.
